Weekly Menu Plan with Gluten Free Ideas

What a busy weekend, so busy I didn’t get a chance to plan my weekly menu plan so here I am doing it on the fly. Oh I don’t like this, don’t like it all, too much for this likes-to-be-organised person so from now on I am going to do 2 weeks in advance to always have a back up.

The good thing is I have a decent enough range of recipes on here that I can do it on the fly, that’s the good thing about blogging your menu plans ever week.

Weekly Menu Plan

MondayBaked Taco’s - I tell you these are the bee’s knees, so so yummy and easy. I make them with mince for the boys and just mashed beans for me, they are also gluten free.

TuesdayGluten Free Tuna and Potato Bake with lots of steamed vegies

Wednesday – Sausage’s for the boys, Gluten Free Potato Bake for all which I have recently been making with 0% Chobani Greek Yoghurt instead of the cream and it’s just as tasty and way better for you. For me I’ll have the Eggplant and Lentil Balls I discovered the other week.

ThursdayGluten Free Eggplant Rolls – with a yummy salad

FridayRoasted Pumpkin and Vegetable Risotto, the boys will have Slow Cooker Salsa Chicken as well.

SaturdayCauliflower Pizza Crust – can’t wait to try this yummy gluten free pizza

Sunday – Simple Supper Night

Only 2 1/2 weeks of school holidays left, seems like yesterday we broke up for the year. It is going by very fast.  It feels good to be back into some sort of routine.

Weekly Menu Plan

Monday – Gluten Free Satay Noodle and Vegetable Stir fry – I will be making my own satay, that way I can control the heat

Tuesday - Tuna Burgers made gluten free by either using gluten free rolls or bread, the other ingredients should be ok

WednesdayCreamy Gluten Free Pasta with Spring Vegetables

ThursdaySalsa Stoup with Avocado Double Baked Quesadilla’s – made gluten free by using corn tortillas

Friday –  Slow Cooker Corned Beef with Gluten Free Roasted Vegetable Bake 

Saturday – Spaghetti and Meatballs for the  boys

Sunday – Simple Supper Night

Happy New Year! Hope you all survived the festive season, I did but I can tell you I am a little sick of looking at and worrying about food.

But we all still have to eat don’t we? So here I am, first post of the year, back into routine and menu planning.

Weekly Menu Plan

Monday – Gluten Free Honey Mustard Chicken (recipe to come soon) with yummy mashed potatoes and steamed vegies. Simple Jacket Potatoes for me as I don’t eat chicken.

TuesdayGluten Free Tuna and Mushroom Pasta Bake

Wednesday – Gluten Free Tortilla Stack with Beans and Vegies

Thursday – Chicken Parmigania for the boys and Gluten Free Eggplant Parmagania for me. Homemade wedges and veg for all.

FridayGluten Free Tuna and Rice Slice with salad

Saturday – Snags for the boys, vegetarian snags for me (yes I found gluten free ones!) with gluten free potato bake.

How are we all in this hectic time? I am curious about those that don’t celebrate Christmas, is it still a busy time for you?

For me, it is non stop so that’s why this week’s menu, like last weeks is super super easy and may repeat itself. I won’t be doing a Weekly Menu next week due to it being Christmas Week. (and my birthday week too!)

Tuesday – Sundried Tomato Chicken Kebabs with Steamed Rice for the boys. I shall have some of that rice with some stir fry vegetables

Wednesday – Lamb Kofta’s for the boys and Gluten Free Potato Bake for all. I’ll have Gluten Free Vegetarian Bean Burgers from the freezer as well.

ThursdayGluten Free Tuna and Mushroom Pasta Bake

Friday – Yummy Nachos!

Saturday – Some Snags on the BBQ for the boys with Gluten Free Vegetable Bake for all.

As they say we are getting to the pointy end of the year. Anyone else got a crazy 2 weeks before the big day? Yep me too.

I don’t think I need to tell you that my meals for the next 2 weeks are going to be sooo simple and easy and repetitive… no time for nothing new here folks. Thought I would share it with you anyway.

I have a super duper busy week this week. I am out 4 nights out of five weeknights, by Saturday night I will be not work talking too. It’s weeks like these that menu planning comes into it’s own, having meals planned and even prepared early are such a life saver. As a coeliac I cannot rely on take away so menu planning is even more vital.

Weekly Menu Plan

Monday – Chicken Schnitzel for the boys, Gluten Free Thai Fishcakes for me and yummy mashed potato and steamed vegies for all.

Tuesday – Tuna and Tomato Gluten Free Pasta and garlic bread for the boys

WednesdayGluten Free Eggplant Roll-Ups with home made wedges made with Rick Grants Seasoning for Wedges – its gluten free and soooo good!

Thursday – Slow Cooker Sausage Casserole for the boys, steamed rice for all and a Vegie Curry for me

Friday – Taco’s – Beef for the boys and Bean for me.

Saturday –  Pumpkin, Chickpea and Zucchini Burgers, use gluten flour to make gluten free, plus gluten free buns, really yummy and easy to make.

It really amazes me that I am typing November. Just amazing that I am now in full Christmas planning mode – it truly sneaks up me.

Weekly Menu Plan

MondayGluten Free Fettuccine Carbonara – I cook the bacon separately and just add it for the boys, I don’t have it.

TuesdayGluten Free Roasted Pumpkin and Vegetable Risotto – mmm we haven’t had this in ages so am looking forward to this.

Wednesday – time for some meat for the boys, I will use the LFGF Chicken seasoning mix and coat some chicken to cook up then make a BIG salad for them and me with tuna and boiled eggs for my protein.

ThursdayGluten Free Tuna and Mushroom Pasta – a family favourite

Friday – and for my something new to try this week: Bean and Pumpkin Stew, easy to make gluten free and the boys can have some Beef Burgers as well.

Saturday – time for some yummy omelettes, hubby makes them and they are so good.

Gluten Free Menu Plan

I am back with a menu plan this week. It isn’t that different that my usual but I thought I should take the time to share as someone out there may need the inspiration, especially as I have gluten free meal ideas as well as simple, quick and easy meals. Nothing fancy here folks!

Weekly Menu Plan

Monday – Taco’s. Seriously, taco’s is such an easy meal to prepare. Plus it’s healthy as I put grated carrot and zucchini in the meat sauce plus the tomato, greek yoghurt and low fat grated grated cheese. The kids love it as it’s fun to eat.

To make Gluten Free: I make my own bean filling with tin red kidney beans, tin of tomatoes, grated carrot, grated zucchini, chopped red capsicum and cook all together. I then scoop this into the bottom of taco shells, add lettuce, tomatoes, 0% greek yoghurt, low fat grated cheese and avocado.

Tuesday – Gluten Free Pasta Bake. Really simple and doing it the cheats way. Gluten Free Pasta with Leggo’s Pasta Sauce, topped with grated cheese and baked. The boys will have garlic bread with theirs too. (gluten free garlic bread is just too expensive to buy or even make your own)

WednesdayGluten Free Tuna Burgers with sweet potato fries and mixed salad

Thursday – the boys will have Corned Beef done in the slow cooker while I will have Roasted Vegetable Bake. I add a tin of chickpeas to bump up the protein factor for me.

Friday – I’ll keep the slow cooker out and make the boys Salsa Chicken. I’ll serve that with rice and also make a simple gluten free Vegetable Curry for me. I cut a stack of vegetables and use a red curry paste with coconut evapourated milk.

Saturday – Lemon Tuna Pasta. Gluten free pasta tossed with tin tuna, 0% fat greek yoghurt (Chobani is a good one), and juice of a lemon.

Sunday – Simple Supper Night which usually means leftovers or ‘Bitsa’ meal. ‘Bits of this’ and ‘Bits of that’

Gluten Free Menu Plans

It has been several weeks since I have written a menu plan. That’s because I still haven’t gotten myself sorted since our holiday. We are basically have the same things every week so it would be boring for me to post and you to read the same thing every Monday.

So this week I thought I’d share other people that have gluten free weekly menu plans that I check out, so then you can at least see someone doing menu plans!

A recently new to me blog is Stockpiling Moms, it is a great website that is about coupons and deals that can be found in America but more importantly they feature some great gluten free recipes and a Weekly Gluten Free Menu Plan.

Another gluten free blog is Gluten Freely Frugal and the owners name is Janelle – no it’s not me! She shares gluten free coupons and deals for the folk in the USA but for the rest of us  she shares gluten free recipes, gluten free weekly menu plan and even when there are gluten free ebooks for free through Amazon Kindle.

Musings of a Housewife is another american blog filled with some great posts about everything! Love her weekly gluten free menu plans. Looking forward to hearing about her trip to Disney World which is where she is at the moment!

I love checking out Org Junkie’s Menu Plan and you know I always link to her when I do menu plan. As Laura (from Org Junkie) has a child that require allergy friendly food she often has many recipe ideas. Plus many other allergy friendly parents link up to her as well so you can check out other blogs. In fact one link up she did was for recipe indexes which is a great treasure trove of recipe ideas.

And I am ending this with my own group of gluten free menu plans.

My Menu Plan with Gluten Free Meal Ideas 23rd July 2012

This will be my last weekly meal plan for a few weeks. I obviously am not doing a meal plan while on holiday! We hope to eat out alot, hoping the cafes and restaurants of New York know how to cook gluten free for this coeliac.

As per usual, nothing new on this menu plan, they will become much more exciting when I get back, I promise and I have time to test more recipes.

Friday – Mini Beef Burgers for the Boys and a big steaming bowl of Roasted Pumpkin soup for me

Saturday – Leftovers or what I call a ‘Bitzer Meal’ ie ‘bits of this dish and bits of that dish’.

Sunday – Simple Supper which is Takeaway Night for our last night in Australia
